Kutatásunk során 25 különböző típusú húskészítmény nitrit tartalmát határoztuk meg spektrofotometriás eljárás segítségével. A nitritet vizes extrakcioval kivontuk a termékből majd derivatizálás után azo festékként határoztuk meg. A kapott értékeket összehasonlítottuk az az Európai Uniós törvény által meghatározott határértékkel.
